Cod Plaki recipe

Even though we are fans of Mexican food, we like to add variety to our weekly meal plans. Cod Plaki is a Greek dish made with tomatoes and onions and extra virgin olive oil. Traditionally, in Greece, people cook plaki with mackerel fish; but red snapper, cod or sea bass works great. We like eating healthy, but our food needs to be flavorful everyday.

Greek dish made with fish, tomatoes and onions and extra virgin olive oil.
Servings: 4 people
Ingredients
  • 4 pieces Cod fillets
  • 1 tsp Dill
  • 1 tsp Mint
  • 1 cup olive oil
  • 1 tsp Sugar
  • 3 cloves garlic
  • 1 piece Lemon
  • 2 whole Onions
  • 3 whole Tomatoes
  • 1 cup Water
Instructions
Prep Ahead
  1. Heat the oil in a pan. Add the onions for 5 minutes at medium heat.
  2. Add the tomatoes, garlic, sugar, dill and mint, with 1cup of water. Simmer,uncovered, for 20 minutes, until the liquid had reduced by half.
  3. Season with salt and pepper. Let it cool and store in the fridge until you are ready to use.
Cooking Instructions
  1. Bring sauce to a boil, reduce heat to med-low, add the fish steaks and cook gently for 10-12 minutes, until the fish is just cooked.
  2. Remove from the heat and add the lemon juice. Cover and let stand for 10 minutes. Serve with a side of rice.
