cucumber chamoy and lime salsa

Ingredients

  • 1 lime
  • 4 baby cucumbers (for pickling), cut into 1/4-inch dice
  • 4 tbsp Mölli Culiacan Chamoy sauce
  • 3 green onions, finely chopped
  • 1 tablespoon mint, finely chopped
  • 1/4 tsp salt

Directions

  1. Remove peel, including all white pith, from lime with a sharp pairing knife. Cut segments free from membranes and finely chop segments, then combine with remaining cucumber salsa ingredients in a medium bowl. Serve chilled as a side for grilled fish or seafood; or simply as a refreshing salad. Provecho!
