Ingredients
- 3 cups leftover stuffing
- 1 cup shredded cheddar cheese
- 1 jar Mölli Veracruz cooking sauce
- 12 large eggs
- Salt and pepper to taste
Directions
- Preheat a large skillet coated with cooking spray, over medium heat. Place leftover stuffing into skillet, cook for 1 minute, stirring occasionally. Add Veracruz cooking sauce and shredded cheddar, stir to mix evenly, and cook for 2 minutes.
- In a medium bowl, whisk together eggs. Add salt and pepper to taste, keeping in mind how much seasoning was used in your stuffing.
- Spread stuffing evenly over skillet. Pour egg mixture over stuffing and mix thoroughly. Cook, stirring occasionally, until eggs are set, about 5 minutes. Provecho!
