Leftover stuffing scramble

Ingredients

  • 3 cups leftover stuffing
  • 1 cup shredded cheddar cheese
  • 1 jar Mölli Veracruz cooking sauce
  • 12 large eggs
  • Salt and pepper to taste

Directions

  1. Preheat a large skillet coated with cooking spray, over medium heat. Place leftover stuffing into skillet, cook for 1 minute, stirring occasionally. Add Veracruz cooking sauce and shredded cheddar, stir to mix evenly, and cook for 2 minutes.
  2. In a medium bowl, whisk together eggs. Add salt and pepper to taste, keeping in mind how much seasoning was used in your stuffing.
  3. Spread stuffing evenly over skillet. Pour egg mixture over stuffing and mix thoroughly. Cook, stirring occasionally, until eggs are set, about 5 minutes. Provecho!
