Meatball soup

Ingredients

For the meatballs

  • 1 lb Ground beef 95% lean
  • 1/2 cup white rice
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 egg

For the soup

  • 1 jar Mölli Veracruz Cooking Sauce
  • 1 mediium zucchini, diced
  • 1/3 cup cilantro, chopped
  • 7 cups chicken broth

Directions

  1. Place chicken broth, cilantro and Veracruz sauce in a small pot and bring to a boil.
  2. Meanwhile, combine all ingredients for the meatballs, stir well to combine. Make about 15 small meatballs. When soup is boiling, reduce heat to simmer and carefully drop in the meatballs. Gently stir, bring to a boil and reduce heat to simmer. Cook for 20 minutes.
  3. Add the zucchini and cook for 10 more minutes. Season meatball soup to taste and serve. Provecho!

TIP: Substitute ground beef with ground turkey or chicken to lower fat intake.
