Buenos dias. It is hard to believe that summer is almost over. Let’s try to hold on to that summery feeling all Labor Day Weekend long.

Which means Grilled Mexican Elotes for dinner tonight (above), and a Tangy and Spicy Shrimp with Pineapple stir fry.

Let’s start Saturday off right with these delicious Breakfast Entomatadas, some freshly-squeezed orange juice and a good cup of Noble Coyote coffee.

For dinner, we’re thinking of grilling up a blowout of an Oaxacan Cheeseburger along with a refreshing Mangonada.

What a weekend! Huevos Rancheros for Sunday breakfast! A Citrusy Roasted Chicken for lunch! Our amazing Portobello Fajitas in Red Chile Marinade for a healthy and tasty dinner, and all will be right with the world. At least in our world.
