Mexican Sloppy Joes

Sloppy Joe mixture gets better as it sits in the fridge. Make this recipe up to 2 days in advance and refrigerate it. You can also freeze it for up to 2 months.

Ingredients

  • 2 tbsp olive oilc
  • 1 red bell pepper, seeded and diced
  • 1/2 medium yellow onion, diced
  • 2 garlic cloves, finely chopped
  • 1/8 cup tomato paste
  • 1 lb ground beef
  • 1 tsp chili cumin
  • 1 tsp kosher salt, as needed
  • 1 jar Morelos cooking sauce
  • 1/2 cup water
  • 1 tbsp cider vinegar
  • 1 tbsp Worcestershire sauce
  • 1 tbsp dark brown sugar
  • 6  hamburger buns

Preparation

  1. Heat the oil in a large pot over medium heat. Add peppers, onion, and garlic, and cook, until the vegetables have softened. Stir occasionally for about 5 minutes.
  2. Add tomato paste and cook for 3 minutes; add salt to taste.
  3. Add the ground beef and cook, over high heat, stirring, for 3 minutes or until it is no longer pink.
  4. Add water, a jar of Molli Morelos sauce tomato sauce, vinegar, Worcestershire, cumin, and brown sugar, stir to combine, and bring to a boil.
  5. Reduce the heat to low and simmer, for about 20 minutes.
  6. Serve on hot buns. Proveho!
