pork in chipotle sauce

Ingredients

  • 1 1/2 lbs Pork loin, cut into 1” cubes
  • 1 tbsp Lard or cooking oil
  • 1 jar Molli Morelos Cooking Sauce
  • 1 Garlic clove
  • 2 Hard boiled egg, quartered

Directions

  1. Heat lard or oil in a pot over medium high heat. Add cubed meat and brown on all sides, about 4 minutes.
  2. Add Molli Morelos Cooking sauce and garlic clove. Bring to a boil, then lower heat to medium low, cover and cook for about 40 minutes, until sauce is thick enough to leave residue on a spoon.
  3. Season with salt to taste. Garnish with two pieces of hard boiled eggs. Serve pork loin with a side of refried beans and warm corn tortillas. Provecho!
