Roast salmon with spicy tomato sauce

Ingredients

  • 2 tbsp capers, drained
  • 1 jar Mölli Veracruz Cooking sauce
  • 4 salmon fillets (about 6 oz each)
  • Salt and pepper to taste

Directions

  1. Preheat oven to 375F.
  2. Combine Veracruz cooking sauce and capers in an 8-inch square baking dish.
  3. Place salmon, skin side down, on mixture and season with salt and pepper to taste. Cover with foil.
  4. Bake for 15 minutes, or until salmon flakes easily. Place one salmon fillet on a plate and divide sauce among all servings. Serve with a side of couscous or white rice. Provecho!
