It’s wicked hot here in Texas, has been all week, and it is going to be like that for a while. So what to cook? We’re thinking it’d be good to make our recipe for fruit gazpacho Moreliano with chamoy sauce for dinner, accompanied by crumbled cotija cheese.

Our recipe for chilled spicy avocado soup would answer this week as well. So would the roasted salmon with spicy tomato sauce recipe, which is light and flavorful and awesome as we unwind and the day’s heat begins to decline.

Or you could get slightly more involved and make our grilled ancho-rubbed flank steak with tomato, corn and asparagus salad (above).

Maybe you could cook our Yucatecan carnitas with pineapple salsa? You can make it overnight in the slow cooker if you want to come home to a dinner ready to heat and eat.

Or you could simply have an easy, smooth and refreshing Chamoy Moscow mule.  Because, why not?
