2015-05-13_photo_web (8)When we were kids growing up in the largest city in the world (at the time), our idea of Mexican comfort food was a guisado with beans and rice on the side.

The word guisado is an umbrella term for a stewed mixture, usually meat or vegetables simmered with chiles, tomatoes or other Mexican herbs such as epazote. Most guisados contain a short list of ingredients, thus they are viewed as everyday dishes; but when done well, they’re unforgettable.

The most fascinating thing about guisados is how all-encompassing they are. Like a Chinese stir-fry or an American casserole, a guisado can really be anything, as long as it’s served with tortillas, beans and rice.

We’ve put a list of some of our favorite guisados made with Mölli so you can give them a try at home. Believe us when we say you’ll want to make these every-single-day! Provecho!

Widely popular in Mexico City, Purslane and Pork Stew is slightly spicy but, oh so worth it!

A classic dish from Puebla, Chicken Tinga is the best way to eat chicken. Plus you can use it to make flautas, chiles rellenos, tostadas, and tortas.

Oaxaca is known for its amazing use of chile peppers, these Albondigas in Ancho-Pasilla sauce are a crowd-pleaser and can be found in many houses around that state.

If you’ve never had Chicharron en salsa, then you’ve never eaten real Mexican food. Pork rinds are to Mexican food, what bacon are to American. Gotta have it!

Yucatan is known for its beautiful beaches and Mayan ruins, but also for its food. Cochinita Pibil is the quintessential Yucaten dish. Sweet, slightly sour and full of flavor; we could eat it every day!

Beef Barbacoa is a dish that is widely prepared in the Mexican border states of Nuevo Leon, Coahuila and Chihuahua. Traditionally made with cow’s lips and cheeks, we make ours with sirloin, a less fatty yet equally flavorful cut.
