Fish and potatoes casserole

Ingredients

  • 3 tbsp extra virgin olive oil
  • 2 potatoes, thinly sliced
  • 1/2 medium onion, thinly sliced in half moons
  • 1 jar Mölli Morelos Cooking Sauce
  • 1 1/2 lbs white fish fillets (cod,halibut or haddock)
  • 1 bunch broccolini

Directions

  1. Preheat oven to 450F.
  2. Heat olive oil in a large cast iron skillet or ovenproof pan. Layer potatoes, onion in pan; season with salt and pepper.
  3. Cook over high heat until browned, about 3 minutes. Turn potatoes, lower heat to medium, and cook for 10 more minutes.
  4. Remove pan from heat. Arrange fish over potatoes; top with Morelos cooking sauce and broccolini.
  5. Bake in oven until fish flakes easily when pierced with a fork, about 12 minutes. Serve with potatoes and broccolini on the side. Provecho!
