Poblano stuffed meatloaf

Ingredients

  • 3/4 cup breadcrumbs
  • 1/4 cup milk
  • 1/4 onion, finely chopped
  • 1 garlic clove, pressed
  • 1 tsp dried oregano
  • 1/2 tsp ground cumin
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 2 lbs lean ground beef
  • 1 lb ground pork
  • 3 eggs
  • 3 poblano peppers, roasted, peeled and seeded; cut into strips
  • 4 slices bacon
  • 1 jar Mölli Morelos cooking sauce
  • 1 tbsp butter

Directions

  1. Preheat oven to 350F. Place breadcrumbs and milk in a large bowl. Mix thoroughly. Add spices, meats and eggs. Using your hands, combine thoroughly.
  2. Transfer to a clean board and pat into a rectangle. Arrange the poblamo strips down the center. Roll up lenghtwise to form a loaf, place in a baking pan, top with bacon strips and bake for one hour.
  3. Meanwhile, melt butter in a small skillet, add the Morelos cooking sauce, and boil for 5 minutes. Keep warm.
  4. Let meatloaf stand for 15 minutes before slicing. Serve a piece of meatloaf on a plate, and pour Morelos sauce on top. Provecho!
