Ingredients
- 3/4 cup breadcrumbs
- 1/4 cup milk
- 1/4 onion, finely chopped
- 1 garlic clove, pressed
- 1 tsp dried oregano
- 1/2 tsp ground cumin
- 1 tsp salt
- 1/2 tsp ground black pepper
- 2 lbs lean ground beef
- 1 lb ground pork
- 3 eggs
- 3 poblano peppers, roasted, peeled and seeded; cut into strips
- 4 slices bacon
- 1 jar Mölli Morelos cooking sauce
- 1 tbsp butter
Directions
- Preheat oven to 350F. Place breadcrumbs and milk in a large bowl. Mix thoroughly. Add spices, meats and eggs. Using your hands, combine thoroughly.
- Transfer to a clean board and pat into a rectangle. Arrange the poblamo strips down the center. Roll up lenghtwise to form a loaf, place in a baking pan, top with bacon strips and bake for one hour.
- Meanwhile, melt butter in a small skillet, add the Morelos cooking sauce, and boil for 5 minutes. Keep warm.
- Let meatloaf stand for 15 minutes before slicing. Serve a piece of meatloaf on a plate, and pour Morelos sauce on top. Provecho!
