Ingredients
- 1 sweet potato – cut in large chunks
- 1/2 onion – cut in wedges
- 1/2 cup Mölli Yucatan Mojo marinade
- 1 1/2 lbs chicken pieces (legs, thighs, breast)
- 2 tablespoons butter, sliced
- 2 tbsp fresh parsley, chopped
Directions
- Place chicken in the bottom of a slow cooker. Toss the sweet potato chunks and onion wedges on top.
- Pour Yucatan mojo marinade over chicken and vegetables. Top with butter slices.
- Cook on High for 4 Hours. Serve with fresh parsley on top. Provecho!
