Ingredients

  • 1 sweet potato – cut in large chunks
  • 1/2 onion – cut in wedges
  • 1/2 cup Mölli Yucatan Mojo marinade
  • 1 1/2 lbs chicken pieces (legs, thighs, breast)
  • 2 tablespoons butter, sliced
  • 2 tbsp fresh parsley, chopped

Directions

  1. Place chicken in the bottom of a slow cooker. Toss the sweet potato chunks and onion wedges on top.
  2. Pour Yucatan mojo marinade over chicken and vegetables. Top with butter slices.
  3. Cook on High for 4 Hours. Serve with fresh parsley on top. Provecho!
