Ingredients
- 4 tamales husks removed, diced
- 1 tbsp vegetable oil
- salt to taste
- 1/2 cup Mölli Mexico City cooking sauce
- 4 eggs
- ½ cup grated Cheddar or Monterey Jack cheese
Directions
- Heat the oil in a heavy skillet over medium-high heat and fry the diced tamales until browned, about 2 minutes, stirring frequently.
- Meanwhile, beat the eggs thoroughly. Add eggs to skillet and cook until half-set.
- Add the Mexico City cooking sauce and cook until ¾ set, stirring frequently.
- Sprinkle with cheese. Cover and remove from heat. Serve as tacos, or alongside refried beans and homefries. Provecho!
