tamale migas

Ingredients

  • 4 tamales husks removed, diced
  • 1 tbsp vegetable oil
  • salt to taste
  • 1/2 cup Mölli Mexico City cooking sauce
  • 4 eggs
  • ½ cup grated Cheddar or Monterey Jack cheese

Directions

  1. Heat the oil in a heavy skillet over medium-high heat and fry the diced tamales until browned, about 2 minutes, stirring frequently.
  2. Meanwhile, beat the eggs thoroughly. Add eggs to skillet and cook until half-set.
  3. Add the Mexico City cooking sauce and cook until ¾ set, stirring frequently.
  4. Sprinkle with cheese. Cover and remove from heat. Serve as tacos, or alongside refried beans and homefries. Provecho!
