Spicy tomato and smoked salmon pasta

Ingredients

  • 8 oz dried pasta, such as penne
  • 1 jar Mölli Veracruz cooking sauce
  • 1 oz cream cheese
  • 8 oz smoked salmon, coarsely chopped
  • 10 basil leaves, chopped
  • 1/2 cup Parmesan cheese, for garnish

Directions

  1. Bring a pot of water to a boil. Add the pasta, cook according to package directions and drain.
  2. Pour Veracruz sauce in a medium skillet and bring to a boil. Reduce heat to low and stir in the cream cheese, stirring until it has melted. Add the smoked salmon and stir to combine. Remove from heat.
  3. Add the drained pasta to the sauce, toss to coat and let the pasta soak in the sauce for 1 minute. Stir in the basil, sprinkle with Parmesan cheese to taste and serve. Provecho!
