2lbs.Beef Chuck or beef for stewcut into 1½ in. cubes
1tbspolive oil
3carrots; peeledand sliced into rounds
1/2cupred wine
1cupsof beef broth or water
2bay leaves
1jar Molli Veracruz cooking sauce
Salt to taste
Pepper to taste
Instructions
Season the meat well with salt & pepper.
Heat the oil in the Instapot and add the carrots. Cook for about 2-3 minutes. Add meat and brown on all sides.
Pour Molli Veracruz cooking sauce, water (or broth) and wine in the pot, cover, and cook for 35 minutes. (Check NOTES for cooking time using other methods.)
Season to taste and serve with a crusty bread on the side. Provecho!
