baked fish in citrusy ancho and pasilla sauce

Ingredients

  • 4 Fish fillets (6 oz e/a)
  • 1/2 jar Mölli Oaxaca marinade
  • 1 orange, sliced in rounds
  • 1 lime/lemon, sliced in rounds
  • Salt to taste

Directions

  1. Preheat oven to 370F.
  2. Lay the fish into a non-reactive baking dish. Season with salt. Spread or brush Oaxaca marinade over both sides of the fish. Cover and refrigerate for at least 10 minutes but up to an hour.
  3. Arrange sliced oranges over a baking dish coated with cooking spray and top with fish. Place lime/lemon slices on top of fish. Place in oven and cook until fish is opaque in center (no need to turn), 15 to 20 minutes.
  4. Serve with citrus slices and roasted veggies on the side. Provecho!
