Black Bean burger

Ingredients

  • 2 cups Black beans, drained
  • ½ Onion, finely chopped
  • 2 Garlic cloves, finely chopped
  • 2 tbsp Mölli Oaxaca Marinade
  • 2 tbsp Olive oil
  • ½ cup Bread crumbs
  • Salt to taste
  • 6 oz Queso fresco, thinly sliced
  • ½ cup Sour cream
  • 1 Avocado, sliced
  • 4 Burger buns
  • 1 can Chipotle in adobo

Directions

  1. Preheat grill to medium-high. In a bowl, mash black beans with a fork until they got a pasty and thick consistency.
  2. In a large saucepan, heat the oil on medium-high heat, add the onion and cook until lightly golden, add the garlic and cook for 30 seconds, then add the Oaxaca marinade and cook for another minute. Add the beans to the saucepan and mix until everything is fully integrated. Let cool.
  3. Crack the egg into a large bowl and beat it lightly. Add the cooked beans and breadcrumbs to the bowl and mix until the mixture is sticky and holds together. Divide the mixture into four patties.
  4. Lightly oil the grill, place the burgers and cook for about 5 minutes on each side.
  5. Serve in buns and top with queso fresco, avocado and a spoonful of sour cream. Add a chopped chipotle if you want some extra spice. Provecho!
