Mexican Cauliflower Rice

  • 1 jar Molli Morelos cooking sauce
  • 1 head cauliflower cut into large chunks or 1 bag of frozen riced cauliflower
  • 1 tsp olive oil
  • ½ cup frozen corn kernels
  • 1 can black beans drained
  • 1 tsp salt
  • 1 serrano pepper sliced for garnish
  1. If using whole cauliflower - Place cauliflower chunks in a food processor and pulse until broken down into rice-size pieces.

  2. Heat olive oil in a large skillet over medium heat; add cauliflower 'rice'. Cover skillet and cook until heated through about 3 to 5 minutes.
  3. Add the Molli Morelos cooking sauce, salt, corn and black beans to the skillet and stir to combine. Cover and cook for more 5 minutes.
  4. Remove the lid and fluff rice with a fork.
  5. Serve and garnish with serrano slices. Provecho!

Make it a full meal by adding grilled chicken cutlets or pork chops.
