Ingredients
- 1 jar Molli Morelos cooking sauce
- 1 head cauliflower cut into large chunks or 1 bag of frozen riced cauliflower
- 1 tsp olive oil
- ½ cup frozen corn kernels
- 1 can black beans drained
- 1 tsp salt
- 1 serrano pepper sliced for garnish
Instructions

If using whole cauliflower - Place cauliflower chunks in a food processor and pulse until broken down into rice-size pieces.

Heat olive oil in a large skillet over medium heat; add cauliflower 'rice'. Cover skillet and cook until heated through about 3 to 5 minutes.

Add the Molli Morelos cooking sauce, salt, corn and black beans to the skillet and stir to combine. Cover and cook for more 5 minutes.

Remove the lid and fluff rice with a fork.

Serve and garnish with serrano slices. Provecho!
Recipe Notes
Make it a full meal by adding grilled chicken cutlets or pork chops.
