Fish kebabs

Ingredients
1.25 lb Halibut fillets or any other thick fleshed fish, cut into 2 inch cubes
8 wood skewers, soaked in water for an hour
8 green onions, stems removed
2 tomatoes, quartered
16 shiitake mushrooms
6 tbsp Molli Acapulco Marinade
1 tsp Salt

Directions
Mix Acapulco marinade and salt in a bowl. Using the skewers, skewer the fish alternately with a green onion, a tomato quarter and a mushroom. Place finished skewers in a large cookie sheet.
Rub all pieces of fish and vegetables with the Acapulco marinade. Refrigerate for 20 minutes.
Meanwhile, preheat grill or broiler to medium high heat. Remove fish kebabsĀ from refrigerator 5 minutes before cooking. Grill or broil for 2 minutes on each side until fish is fully cooked. Serve with corn tortillas and lime wedges on the side. Provecho!
