Maguey & tequila glazed salmon

Ingredients

  • 5 tbsp Mölli Acapulco Marinade
  • 2 tbsp Maguey sweet sap or agave nectar
  • 1 tbsp Silver tequila
  • 1 tsp Salt
  • 4 Salmon fillets, about 5 oz each

Directions

  1. In a shallow glass dish just large enough to hold the salmon fillets in a single layer, stir together the Acapulco marinade, maguey sap, tequila and salt. Add the salmon to the marinade and turn to coat. Let stand at room temperature for 10 minutes.
  2. Preheat oven to 350F. Remove fillets from marinade, reserving the marinade. Place the fillets on a foil-lined rimmed baking sheet.
  3. Bake until fillets are caramelized and salmon is cooked through, about 12-15 minutes. Meanwhile, place remaining marinade in a small bowl and bring to a boil. Turn heat off and pour in a small bowl. Serve salmon with remaining marinade on the side. Provecho!
