Grilled Chicken Fajitas

Ingredients

  • 1 lb Chicken breast, butterflied
  • 3 tbsp Salt
  • 3 tbsp Sugar
  • 1 quart Water
  • 2 tbsp Mölli Acapulco Marinade
  • 2 Avocados, sliced
  • 2 Habanero peppers, de-seeded and sliced
  • 2 Limes, quartered
  • Flour tortillas

Directions

  1. Mix water, salt and sugar in a 1-gallon freezer bag until fully dissolved. Add chicken breasts and let brine for at least an hour, preferably overnight, on the fridge.
  2. Remove chicken from brine, pat dry with paper towels and rub with 2 tbsp of Acapulco Marinade. Preheat grill. Lightly oil the grill. Place chicken on the grill. Flip after 5 minutes. Brush with Acapulco Marinade and grill for another 3 minutes. Flip and brush with Acapulco Marinade. Grill until fully cooked, about 8 more minutes. Transfer the chicken to a warm plate. Let rest for 5 minutes. Slice and serve fajitas with two slices of avocado, warm corn tortillas and lime wedges.
