Ingredients
- 1 lb Chicken breast, butterflied
- 3 tbsp Salt
- 3 tbsp Sugar
- 1 quart Water
- 2 tbsp Mölli Acapulco Marinade
- 2 Avocados, sliced
- 2 Habanero peppers, de-seeded and sliced
- 2 Limes, quartered
- Flour tortillas
Directions
- Mix water, salt and sugar in a 1-gallon freezer bag until fully dissolved. Add chicken breasts and let brine for at least an hour, preferably overnight, on the fridge.
- Remove chicken from brine, pat dry with paper towels and rub with 2 tbsp of Acapulco Marinade. Preheat grill. Lightly oil the grill. Place chicken on the grill. Flip after 5 minutes. Brush with Acapulco Marinade and grill for another 3 minutes. Flip and brush with Acapulco Marinade. Grill until fully cooked, about 8 more minutes. Transfer the chicken to a warm plate. Let rest for 5 minutes. Slice and serve fajitas with two slices of avocado, warm corn tortillas and lime wedges.
