Ingredients
- 1 lb Ground beef; 93% lean
- 1/2 cup bread crumbs
- 1 Egg
- 1/2 tsp salt
- 1/2 tsp freshly ground black pepper
- 3 tbsp Molli Morelos cooking sauce
- 1 tbsp Cooking oil
- 1 cup Cooked rice
- 1 cup refried beans
- 8 Corn tortillas
Instructions
-
Combine ground meat, bread crumbs, egg, salt and pepper until fully integrated. Shape into small meatballs (about the size of a golf ball). Reserve.
-
Heat oil in a deep pot over medium heat. Add the Molli Morelos cooking sauce mixture and cook for 5 minutes.
-
Add meatballs one by one, cover and cook under medium heat for 15 minutes or until fully cooked. Meanwhile, warm the rice, beans and tortillas.
-
To make each meatball taco: Cut each meatball in 3-4 pieces about ½” wide. Spread a tablespoon of rice over the center of the tortillas. Top rice with refried beans, meatball pieces, and a spoonful of the sauce. Roll up. Provecho!
